I’m in Recuperation Station recently from a tooth extraction. No solids for 3 days, no hot food, etc. After a day of ice cream yesterday I am ready for something different.
I turned to some inspiration from Rene Redzepi and his Danish Cold Buttermilk Soup. My friend Rose Lawrence over at Red Bread serves a version of this soup with strawberries and hot buttermilk biscuits. It is a sweet, yet tangy soup and I wanted to add some anti-inflammatory & “superfoods” to help the gum healing process — ginger, turmeric, garlic, onion. The buttermilk is rich in probiotics which is good for those (like me) on antibiotics. Usually I’m not big fan of antibiotics but with such a traumatic mouth experience I don’t want to risk the chance of infection.
The recipe is easy: gather all ingredients and whiz up in a blender. No cooking, barely any chopping, and no hovering over a pot on a stove.
It’s really a zinger of a soup, probably even more excellent tasting on a hot day in summer. Try it!
Here’s the Recipe:
1 cup buttermilk
1/2 cucumber, sliced
1/4 inch ginger, sliced
1/4 inch fresh turmeric root, sliced
1 clove garlic, crushed
1/2 onion, sliced
1 Tbsp raw manuka honey
1 tsp salt
Whiz all ingredients in blender. Pour into bowl or glass, grate some fresh turmeric over top, and serve.
